Rice Crispy Treats

Chewy squares made with browned butter, a little vanilla, and the right amount of salt.


Makes 12 squares

Ingredients

  • 8 tbsp unsalted butter
  • 10 ounces marshmallows
  • 1 teaspoon vanilla extract
  • 1 teaspoon pink salt
  • 4½ cups crispy rice cereal

Instructions

  1. Grease a 9×9-inch baking pan.
    • Use nonstick spray or a little butter.
  2. Brown the butter in a large pot over medium-low heat.
    • Swirl the pot occasionally. The butter will foam and crackle.
    • When the crackling stops, keep swirling for 2 to 3 minutes, until it smells nutty and amber bits form on the bottom.
  3. Reduce the heat to low and add the marshmallows, after they melt add vanilla, and salt.
    • Take the pot off the heat after everything is incorporated
  4. Stir in the cereal in the pot
    • Keep stirring until every piece is evenly coated.
  5. Move the mixture into the pan.
    • Use a spatula or damp fingers to spread it into an even layer.
    • Press gently, just enough to hold it together.
    • The harder you pack it, the denser and less chewy it gets.
  6. Let cool, then cut into squares.
